About this trip

A 7-Day Journey of Taste, Discovery, and Connection with spectacular hikes……….

The island of São Miguel has been chosen as our destination — for the third time! (It’s just a five-hour nonstop flight from Boston or New York.) This hidden gem, one of nine islands in the middle of the Atlantic that form the Azores, holds a magic that’s hard to describe until you’re there. Rugged cliffs, rolling green hills, misty mornings, and the scent of the sea set the stage for an unforgettable adventure.

Here, the volcanic soil and the surrounding ocean shape both the land and the table — creating a food heritage deeply rooted in nature and tradition.

BREATHE in the Atlantic air,

HIKE alongside the “happy cows” of São Miguel,

TASTE your way across this island paradise. Each day features a hike tailored to your pace — from gentle walks through emerald pastures to coastal trails overlooking the vast Atlantic — followed by chef-crafted meals that tell the story of the island itself. We’ll share roadside picnics of fresh fish, gathered from the gardens and waters of the Azores, and soak in hot springs beneath open skies.

I’ve sought out the best of the best — from regenerative farmers and passionate foragers to remarkable chefs who create dishes that reflect the textures and balance of island life. Together, we’ll cook, taste, and learn through immersive experiences that honor the rhythms of land and sea.

Whether you’re a curious home cook or a seasoned culinary professional, this 7-day all-inclusive retreat will open your senses and your heart. From hands-on cooking with notable chefs to exploring verdant plantations and vineyards, from island wines to lively conversations, every detail — food, wine, accommodations, and activities — has been thoughtfully chosen for an unforgettable week of flavor, beauty, and discovery.

Come taste the Azores with us — where the earth, ocean, and spirit meet in every bite.

Jan, you did a superb job of putting together a remarkable trip in the Azores. The food was superb and the chefs, hosts, and farmers you introduced us to were just great! You geared the hiking trails
to each of us! The fish market was a marvelous, side trip. The cocktails, the farm and garden tours, the cheese pairing, the water tasting, the hikes, the picnic.. My lord, you kept us busy, but I wouldn’t change a bit. Our tour guides were lovely, entertaining and very helpful. You have a gift of connecting people and places. And your subtle style of teaching shines through. Thank you!
— A. S.
Jan, you created an experience that I won’t ever forget. I loved the daily hikes, even though I have never considered myself a hiker!

Let the Azorean Adventure Begin!

We have chosen Furnas Lake region for the accommodations. Furnas is the most easterly volcano on Sao Miguel and the best place to really feel the volcanic origins of the Azores. There are over thirty geysers and hot springs dotted around the village. Their temperatures vary, as does their mineral content – from the cool, crystal-clear waters of the drinking fountains to iron-rich hot springs and swimming pools. From the arrival of the first settlers to the valley, residents and visitors have been enjoying the therapeutic waters of Furnas for over 500 years, and you will too!

There will be three cooking classes throughout the week, each beginning with a tour of the gardens and an overview of the purveyors. With a few culinary professionals like Chef Hugo Ferreira and Chef Maria da Paz Estrella Pimentel, organic farmers Paulo & Ines, and culinary entrepreneur Pete Luckett, we have chosen among those. Each will offer us a tour of their home gardens, with fresh, authentic meals served over paired wines.  Yes, we observe regenerative farmers and gardeners in their way of life.

Delicious Experiences for Life!

At Furnas Lake, time has its own rhythm and the seasons reveal new flavours from the land and the ocean. Chef Hugo offers a modern experience that celebrates traditions and keeps memories alive and always fresh!

There is an abundance of spring waters with charming fountains along the village of Furnas where fresh water from many of the volcanic springs runs nonstop. Some are hot, some warm, some cold, some sulphuric, some bubbly, all truly amazing! A private tour and tasting of many of the volcanic spring waters, along with an academic exploration into their varied healing properties.

And there is a tour, a tasting, and a lovely hike through the oldest organic tea plantation in all of Europe. This five generation family owned farm has been operating since 1883. You will learn about the harvesting of black, green and white teas. This tea is an ecological product, free of pesticides, herbicides and fungicides and is grown sustainably and organically next to rolling meadows of cows grazing on grass, all overlooking the Atlantic Ocean!

And then there is Chef Hugo, whose roots are planted in the Azores, but his culinary technique is that of a worldly, master chef. Hugo will gather vegetables and herbs from the garden with us, using the grass-fed beef of the farm and house made sausages. Together, we will layer the pot which will be submerged into the boiling waters of the volcano. Chef Hugo will teach us the traditional Cozido das Furnas which is possibly Portugal’s most unique dish. It can only be found in Furnas on São Miguel of the Azores islands. This special hearty stew is slow-cooked underground by volcanic heat set amongst steaming rocks and pools on the side of an atmospheric lake, and is a burial ground for Cozido das Furnas. These cooking holes have been passed down through the generations. Many families or restaurants have their own cooking hole, where they make this uniquely-cooked food.

A very old and common practice in Azorean culture is an experience of the joy of picnics.  Baskets in the field overlooking yet another breathtaking view is what a lunch will offer us after a morning of volcanic crater hike by our own local guides and food-enthusiasts, who are so proud of their culture and food heritage. In the Azores, anyone can stop along the way and enjoy a break in a field with cows. Blankets and laughter accompanied this family tradition and lying around to contemplate the landscape is encouraged too!

And there is a hike to a village that can only be accessed by foot along the rugged coast. And a picnic overlooking a volcano.

These are my personal favorites that I have chosen because they represent the culture and the terroir of this amazing beauty!
So consider a 7 day journey with me, as this trip has become a tradition!

The weather is soft tropics in late April and early May, 13-18°C (55-65°F), with overnight lows near 11°C (52°F).

And the water may be a tad bit chilly, but swimable Sea (ocean) temperature 16.7 °C (62-65 °F)

YES ! bring your bathing suit because there are hot springs too!

Azores Day by Day Sample Itinerary:

Sneak peak into the experience: Gazpacho

When we visit the Azores, we step into the worlds of several chefs who open their hearts, kitchens and own farms to us. Dishes are created out of the seasons, and each dish tends to be simple yet sublime. This is one such dish––simple, fresh, inviting, and perfectly seasoned. I do not eat bread, so I left it out for my dish, but all my fellow travelers loved how the bread melted into a tangy, herby mouthful.

1 pound fresh, ripe tomatoes, cubed small
Sea salt
2 ounces (about ¼ cup) minced onion
2 cloves garlic, minced
1 tablespoon white wine vinegar
4 tablespoons water
Bread, sliced very thin (optional)
Garnish: Fresh oregano, Sea salt, Extra-virgin 0live 0il

Season the tomatoes with sea salt. Add the onions and garlic. Add the water and let the mixture rest for about 1 hour; then chill to very cold, almost frozen. Place the bread at the bottom of a bowl, and pile the tomato, garlic, and onion mixture on top. Sprinkle with oregano and sea salt,  and finish with a drizzle of olive oil.
