Hello from Virginia! I am visiting farms and hiking in the mountains… I visited a tiny little restaurant where the food was sublime and well raised. We talked about the meal. When traveling, we eat out a lot. But I choose our restaurants carefully. We order a lot of salads and side dishes. It is rare for us to rave about a simple green salad from most restaurants we visit. We pondered over it. Why was this simple salad so delicious? It was only a salad mix. It had so much variety and it was so fresh. It was that simple. We made a deal to grow a winter garden of greens so we could recreate such a salad at home. And the chicken! We ordered a whole organic and pastured raised chicken and the celery salad which had olives, leaf celery, citrus, red onions and herbs with a white bean tahini puree on the side. Killer great! No indeed for bread or dessert it was too good on its own! So if you're in Charlottesville, VA visit this lovely little bistro that only serves local organic roasted chickens and yummy sides.I will be recreating that olive salad because it is just too good to not have on a regular basis!
