It’s February and I hope you’re coming to the free online (Zoom) cooking class tomorrow! We will be learning about squid. Squid is full of nutrients, so easy, and super affordable. I will show you how to make several different recipes, including techniques on how to  sauté, sear, grill, stuff, and toss! 

And HAPPY Valentine’s Day, a great day to check in with your heart. The heart is one of the most important organs in the body. Therefore, maintaining a healthy heart is essential to a healthy body.What are you doing daily to keep your heart healthy? There is so much we can do. Eating a low-carb diet and getting a healthy amount of potassium each day are key. 

Squid is one of the few shellfish that is low in carbohydrates, with only .87 grams of carbs per 3 grams of boneless squid. It is also a rich source of  potassium, a key mineral involved in supporting heart rhythm balance.  At Oregon State University’s Linus Pauling Institute, a  meta-analysis of nine prospective cohort studies showed that daily potassium intakes ranging between 3,510 and 4,680 milligrams were associated with a 30% reduced risk of stroke, which often begins in the heart. The USDA recommends more:  4,700 milligrams daily potassium intake for individuals aged 14 and up.

Squid also has heart-healthy vitamin E. Vitamin E protects the heart, strengthening it cells and making them less susceptible to damage.

One way to keep the heart healthy is to stay away from anything that increases inflammation, as chronic inflammation can affect the arteries, triggering heart attacks and strokes. Squid is an anti-inflammatory food––and a great source of protein, too.

So eat squid! Of course, how you prepare it makes all the difference. No, you can’t bread it and throw it in a fryer! But I will show you four ways to make it quick and yummy and healthy.
